The type of carbohydrate on your plate, not just the amount, may track with how your weight changes over the years. In a study that followed more than 136,000 adults, shifting toward higher-quality carbohydrates — whole grains, fruit, and non-starchy vegetables — was linked to less weight gain over time, while shifting toward refined grains, starchy foods, and added sugar was linked to more.1
Not All Carbohydrates Behaved the Same
Carbohydrates are the starches, sugars, and fibers in foods like grains, fruit, and vegetables. The study separated them by quality. Refined grains are grains stripped of their fiber-rich outer layers, such as white bread and white rice; whole grains keep those layers, such as oats and brown rice. Non-starchy vegetables include leafy greens, broccoli, and peppers, while starchy vegetables include potatoes, corn, and peas. One component stood out: fiber — the part of plant foods your body cannot fully digest — consistently tracked with less weight gain.
How the Study Worked
The findings pool three long-running groups of US health professionals — the Nurses’ Health Study, its successor Nurses’ Health Study II, and the Health Professionals Follow-up Study — totaling 136,432 adults.1 Participants reported what they ate and were weighed roughly every four years for as long as 24 years. Researchers then looked at how a change in the kinds of carbohydrates a person ate lined up with their weight change over the following four years. Because this is an observational study, it can show an association but cannot prove cause and effect; people who eat more produce and whole grains may differ in other ways that also affect weight.
The Size of the Effect
Translated into everyday terms, each additional daily serving (about 100 grams) of non-starchy vegetables was linked to roughly 3 kilograms — nearly 7 pounds — less weight gain across a four-year span; a similar increase in fruit tracked with about 1.6 kilograms less, and whole grains with about 0.4 kilograms less. In the other direction, a comparable rise in starchy vegetables was linked to about 2.6 kilograms more, and refined grains about 0.8 kilograms more. Each shift was modest on its own, but the pattern added up over the years, and it was somewhat stronger in people who were already carrying extra weight. These are averages across a large population, not a prediction for any single person.
